The author writes in a style similar to Peter Drucker, one of my favorite business writers. He expresses valuable key management points in a succinct, easy to understand way.
The author brings his vast consulting experience together to very effectively relate to the issues that Delta faced. His perspective is how Delta's leaders - 7 CEOs and their Board - dealt with those issues and the leadership lessons we can all learn from the decisions of those leaders.
From this leadership perspective, he chronicles the company history, starting with C.E. Woolman, founder of Delta and a great leader during the company's early decades. Nolan then graphically shows how the roots and a culture that caused a growing company to flourish and thrive were damaged or abandoned by later leaders, ultimately leading Delta into bankruptcy.
The points made regarding the agenda of some management consultants are right on target. They deserve serious consideration by any CEO, Board or executive.
The book is a valuable, textbook case study in how a great company can go awry when the leaders lose focus and depart from the values and culture that made it great.

The authors even advise on programs to look for when purchasing a computer to run your operation and how to design an attractive Web site. It's a step by step guide for someone just starting out in the industry. The authors clearly break down the many, many aspects of the operation. Even offering advice on how to spice up the menu (roast beef becomes succulent roast beef with Au Jus and peaches become yellow cling peach slices.
Although the size of the book may seem overwhelming at first, it's less intimidating when you realize that about half of it is useful charts and forms. All are extremely detailed and helpful. Most you will want to copy or tweak a bit and use. You will probably want to take notes or have a highlighter handy while reading this book.

It covers everything from the basics of what a non-commercial food service is, right through how to set up accounts, the kind of equipment you should have, how to hire employees, statutes you must adhere to, marketing and so on. Everything you could possibly need to know in order to run a non-commercial food service is right at your finger tips. Everything is set out in a logical manner so that you can either read it right through before even starting your business, or use it as a reference guide to dip into when you need to know something once you are established.
At over 600 pages, it's quite a hefty book, but the style of writing flows easily and the print is eye-friendly so that the amount of pages and sheer volume of material presented in it isn't as off-putting as it could be!
Accompanying the book is a CD that contains the forms presented in the book in a ready to use format. This makes the book not only a great reference manual for the industry, but also a hands-on guide to get either started, or better organized in your business.
There would be a lot more people with the confidence to start up their own businesses if there were more "how to" manuals like this one!

It discusses real issues like bookkeeping, operational expenses, necessary computer programs, endless menu ideas, recipe costs, inventory, equipment, packaging, nutritional information, delegation tips, kitchen cleanliness, equipment, first aid, inspections, dishwashing, and food storage. Nothing is overlooked, not even the signs of food allergies, customer service issues, marketing and advertising, catering, taste testing surveys, personnel issues, and surprisingly - how to deal with kickbacks from vendors.
I love the fact that it discusses the history of food service - going back to the time of chuck wagons - and how it provides checklists, forms, employee quizzes, and actual case studies. After reading this book I not only was hungry, but was looking forward to my next meal at a hospital cafeteria.

It effectively covers all the bases for this niche, with everything included from history and menu planning to quality control, labeling regulations, employees and marketing. Filled with numerous checklists and questionnaires, restaurant managers can easily tailor their plans and ideas to best suit their specific needs, whether their restaurant is part of a church, school or prison. It offers numerous reference sources, both on and offline, for further research as needed.
In so thorough a publication, it would be nice to see some information or links on the many non-commercial restaurants that also grow some of their own food onsite, benefitting their bottom line as well as the residents, workers and patrons. Other than this slight omission, it could easily be called the bible of the industry.

It appears as if the pictures are copies of copies of copies taken out of the the original hardback and copied right on some copier rather than done correctly all over again, and there is at least one VERY GOOD picture M I S S I N G!!!!--one of my favorites--where Bob is reading a magazine or paper up close and he has his hat on. NOT DONE RIGHT IS ALSO A TOP FAVORITE: the one where Bob Dylan is playing chess at a French cafe--REALLY REALLY GOOD ONE, I love that one very much--but it still seems COPY OF COPY OF COPY quality--IT IS DARK AND GRITTY. The quality of the pictures in the original hardback book are FAR superior. and I SEE it. I did a copy of the one at the cafe on a copier before I returned the book to the library and believe me it is BETTER quality than the one in this paperback version!!! AAAAHHHHH!!! Maybe people won't notice, but I do notice it. Unfortunately I had to return the hardback book to the library.
P L E A S E TELL THE PUBLISHER TO R E D O THIS BOOK PROPERLY AND RESPECT Bob Dylan's fans because we want quality pictures. This book deserves to be done again properly. Paperback is okay to save the forests, but the quality of the pictures has something to do with the process and technology that they use. They just dished out a paperback version and copied the pictures from some other copies (as I see it) just to make money with no concern about the QUALITY OF THE PICTURES.
May I also suggest Dylan: Visions, Portraits & Back Pages as a book with FAR FAR FAR FAR SUPERIOR quality pictures and it even costs less!
Please do this PICTURE BOOK all over again, PUBLISHERS!!! These pictures deserve FIRST QUALITY production.

They will break your heart absolutely. If you love Dylan and the mythology he created around himself, this book will give you a glimpse behind the curtain. The images of Joan Baez and Dylan are so gorgeous you'll want to duck out of your busy life and cry for five crucial minutes. The image of a back-lit Bob and a shadowy Joan in profile is a just, simple ode to these monoliths. These photos give us what we've intimated about Bob all along.

Excellent on Judaism, sometimes weak on economics.Review Date: 2000-02-08
Beginning with a broad discussion of the limitations Judaism places on economic activity, Dr. Tamari then provides a short survey of Jewish economic history and a selection of responsa on economic disputes. He then devotes several chapters to such topics as tzedakah and taxation, clearly and cogently summarizing what Halakha says about each. The resulting volume will be of great value to anyone who wants to know what Judaism says about economic practice.
It will, however, be less helpful to those who want to learn something about economics -- though it should be added at once that (a) teaching economic principles was not Dr. Tamari's purpose in this volume and (b) at any rate his "sins" in this regard are at least no worse than those of standard mainstream economics textbooks. Still, a sounder economic approach would surely have made the exposition clearer on other topics.
Dr. Tamari is probably just bending over backwards to keep his discussion of Judaism free from commitment to any particular view of economics, while acknowledging that Judaism tends to favor the free market. Unfortunately he therefore sometimes writes that a "society" is free to allocate "its" resources by whatever "market mechanism" it wishes, from the free market to central planning -- ignoring both the economic fact that central planning is not a "market mechanism" at all, and the ethical fact that a State-run economy cannot help but violate the very principles of justice and righteousness that Dr. Tamari otherwise presents so well. In fact, these principles themselves would rule out communism and socialism completely; the institution of private property, together with its corollary prohibitions on theft and fraud, should have committed Judaism to free-market economics, properly understood.
The underlying difficulty here seems lie with Dr. Tamari's conception of what a free market _is_. I say this because he is constantly remarking that Judaism allows certain "distortions" of the free market, when in fact most of the "distortions" he cites are not distortions at all -- or at least need not be, depending how they are encouraged or enforced. (If I am not mistaken, Dr. Tamari studied at the London School of Economics, not exactly a hotbed of free-market thought. The fact that he recognizes an important role for the free market _at all_ is therefore highly commendable.)
All of which means only that Dr. Tamari is one of many people who could profit from a closer reading of Ludwig von Mises and other economists of the Austrian school -- at least to get clear what does and does not constitute a "distortion" of the free market (and in particular to get clear that Jewish religious/ethical observances do not constitute such "distortions"). This fact does not in any way tell against his fine presentation of Judaism's "take" on economics, but it does occasionally distort his presentation of important economic principles.
Viewpoint of an Activist on Social JusticeReview Date: 2006-02-25
As a practicing Jew I learned some additional historical and traditional detail of which I was unaware, relating to economic issues of Jews individually and as communities. I found the discussion of Jewish economics relevant to issues in my own modern life, issues with which I have been actively dealing.
I also learned (as was my original intention) relevant to my own professional interest in "social justice" (health care justice in particular, as it happens). I am sure this book will be valued by activists in environmental and social justice issues, who are for any reason interested in the basis in religious traditions for confronting such issues (or interested just in the jewish basis for some reason).
There must be a lot of people wondering today what the connections are between economic life (both national structure and in personal everyday economics) and a traditional ethical stance of any persuasion. They will find this book interesting.

Judaism did not develop a specific economic theory or system. Instead, writes Meir Tamari, "It proposes a moral-religious framework within which the theory or system must operate." The framework is that there is a divine economy that posits that the earth is the Lord's and man has an allotted share. It follows that we have the obligation to conserve and preserve our share. "Halacha is the practical means of applying to daily life concepts of God's ownership of material goods, man's stewardship of these goods, and God's active participation in man's economic success."
It is seldom that one finds such a wealth of material simply written by a scholar utilizing authentic Jewish sources still relevant in a single volume. Tamari writes comprehensively and expertly on Judaism's economics in the Halacha and in Jewish life.
